Instructions
- Preheat the oven to 400ºF and prepare the sweet potatoes by washing, drying, and pricking their skins.
- Slice the sweet potatoes in half lengthwise, place them on a baking sheet, and drizzle with cooking oil.
- Sprinkle the cut sides with cinnamon, cayenne pepper, and salt, then flip them cut side down and roast for 45-50 minutes until soft.
- While the sweet potatoes roast, prepare the chicken spice rub by mixing smoked paprika, brown sugar, garlic powder, cayenne pepper, salt, and pepper.
- Pat the chicken dry, apply the spice rub, and cook in a heated skillet with oil until browned and cooked through (internal temp 165ºF).
- Steam the green beans in a pot with water for 7-10 minutes until bright green and slightly softened.
- Remove the green beans, add butter, and season with salt and pepper.
- Slice the cooked chicken and divide the sweet potatoes, green beans, and chicken into containers for meal prep.
