Ingredients

Cinnamon Roasted Sweet Potatoes

  • 2 sweet potatoes sweet potatoes (about 3/4 lb. each)
  • 1 Tbsp cooking oil
  • ½ tsp cinnamon
  • pinch cayenne pepper
  • pinch salt

Smoky Chicken

  • 1 tsp smoked paprika
  • 1 tsp brown sugar
  • ¼ tsp garlic powder
  • tsp cayenne pepper
  • ¼ tsp salt
  • to taste freshly ground pepper
  • 2 boneless, skinless chicken breasts (about 2/3 lb. each)
  • 1 Tbsp cooking oil

Green Beans

  • 1 lb. green beans
  • 1 Tbsp butter
  • pinch salt and pepper

Instructions

  1. Preheat the oven to 400ºF and prepare the sweet potatoes by washing, drying, and pricking their skins.
  2. Slice the sweet potatoes in half lengthwise, place them on a baking sheet, and drizzle with cooking oil.
  3. Sprinkle the cut sides with cinnamon, cayenne pepper, and salt, then flip them cut side down and roast for 45-50 minutes until soft.
  4. While the sweet potatoes roast, prepare the chicken spice rub by mixing smoked paprika, brown sugar, garlic powder, cayenne pepper, salt, and pepper.
  5. Pat the chicken dry, apply the spice rub, and cook in a heated skillet with oil until browned and cooked through (internal temp 165ºF).
  6. Steam the green beans in a pot with water for 7-10 minutes until bright green and slightly softened.
  7. Remove the green beans, add butter, and season with salt and pepper.
  8. Slice the cooked chicken and divide the sweet potatoes, green beans, and chicken into containers for meal prep.
