Bitter Leaf Soup

Ingredients

The meat and vegetables

  • 2-3 pounds assorted meat (chicken, beef, smoked fish, smoked turkey)
  • ½ cup cooking oil
  • ½ large onion (sliced)
  • 2 pieces tomatoes (sliced)
  • 2 teaspoons garlic (minced, optional)
  • 2 cups washed bitter leaf
  • 3 cups fresh chopped spinach

The seasonings

  • ½ cup ground crayfish
  • ½ cup ground egusi
  • 1 tablespoon bouillon or 2 maggi cubes
  • to taste salt and pepper

Instructions

  1. 1. Season the meat with salt, maggi, and onions, then boil until tender, reserving about 3 cups of stock.
  2. 2. While the meat is cooking, slice the tomatoes and onions, and mince the garlic.
  3. 3. Heat the oil in a saucepan over medium heat and sauté the onions until translucent.
  4. 4. Add the tomatoes, garlic, and crayfish, then add the cooked meat and press it down.
  5. 5. Stir in the ground egusi and chicken stock, bringing it to a simmer.
  6. 6. Add the washed bitter leaf and spinach, and let it simmer for about 2 minutes.
  7. 7. Serve warm with fufu or your choice of accompaniment.
