Egusi Soup

Ingredients

The soup base

  • 2-3 pounds chicken cut into pieces
  • ½ cup oil
  • ½ cup crayfish
  • 2 cups ground egusi
  • 2 cups spinach
  • 1 tablespoon smoked paprika (optional)
  • 1 cup shredded smoked fish (optional)

Vegetables and seasonings

  • ½ onion onion
  • 3 cloves garlic
  • 2 tomatoes tomatoes

Instructions

  1. Boil the chicken seasoned with salt, smoked paprika, pepper, and onion until tender.
  2. Reserve the chicken stock after cooking.
  3. Slice the tomatoes and onion, and mince the garlic while the chicken cooks.
  4. Heat oil in a saucepan and sauté the onion until translucent.
  5. Add the tomatoes, garlic, and crayfish, then add the cooked chicken pieces and some chicken stock.
  6. In a bowl, mix ground egusi with chicken stock until thick, then scoop into the pot without stirring.
  7. Reduce heat and simmer until egusi forms lumps, then add remaining egusi and adjust consistency with more stock.
  8. Add spinach and let it simmer for a couple of minutes.
  9. Serve warm with plantains or other accompaniments.
