Instructions
- Boil the chicken seasoned with salt, smoked paprika, pepper, and onion until tender.
- Reserve the chicken stock after cooking.
- Slice the tomatoes and onion, and mince the garlic while the chicken cooks.
- Heat oil in a saucepan and sauté the onion until translucent.
- Add the tomatoes, garlic, and crayfish, then add the cooked chicken pieces and some chicken stock.
- In a bowl, mix ground egusi with chicken stock until thick, then scoop into the pot without stirring.
- Reduce heat and simmer until egusi forms lumps, then add remaining egusi and adjust consistency with more stock.
- Add spinach and let it simmer for a couple of minutes.
- Serve warm with plantains or other accompaniments.
