Ingredients

The base

  • 5 cloves garlic
  • 1-2 pieces tomatoes
  • 2 tablespoons parsley
  • 3-4 leaves basil
  • ½ medium onion, chopped
  • 1 tablespoon ginger, chopped
  • 1 teaspoon white pepper
  • 2 teaspoons smoked paprika
  • 1 tablespoon bouillon powder
  • 1 tablespoon green onions
  • 5 cups water

The main ingredients

  • 1½-2 pounds yam, peeled and cut into medium pieces
  • 2 pounds fish (tilapia, snapper, or chicken), cleaned and cut into medium pieces
  • 1-2 cups sliced carrots
  • to taste salt and pepper
  • ½ piece scotch bonnet pepper (optional)

Instructions

  1. Blend garlic, tomatoes, parsley, basil, onion, and ginger in a food processor or blender.
  2. In a large pot, combine the blended mixture with white pepper, smoked paprika, bouillon powder, green onions, and about 3 cups of water, then bring to a boil.
  3. If using chicken, add it at this point and let it simmer for about 10 minutes.
  4. Gently add yams, fish, carrots, and enough water to cover the ingredients, then bring to a boil and let simmer for about 10 minutes.
  5. Adjust seasonings as needed, then remove from heat and serve warm.
