Cow Foot Soup

Ingredients

  • 3-3½ pounds cow foot
  • 1 pound yam or plantain
  • 1 large onion, diced
  • ½ cup diced celery
  • 2-3 pieces green onion, chopped
  • 3 sprigs thyme
  • 1 teaspoon white pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon minced garlic
  • ½-1 teaspoon cayenne pepper
  • 8-12 ounces carrot, sliced
  • 1 tablespoon chopped parsley
  • 1 piece scotch bonnet pepper (optional)
  • to taste salt and pepper

Instructions

  1. Heat oil in a large heavy-bottomed saucepan and sauté onions and celery for 1-2 minutes.
  2. Add spices (paprika, garlic, cayenne, thyme, bouillon, and salt) and stir for another minute.
  3. Add cow foot and stir for about 2 minutes, adding a little water if needed.
  4. Pour in 8-10 cups of water, bring to a boil, and then simmer for 2-3 hours.
  5. About 20 minutes before serving, add yam, carrot, and green onion, cooking until yam is tender.
  6. Adjust seasonings and thickness of the soup before serving warm.
