Cow Foot Soup

Instructions
- Heat oil in a large heavy-bottomed saucepan and sauté onions and celery for 1-2 minutes.
- Add spices (paprika, garlic, cayenne, thyme, bouillon, and salt) and stir for another minute.
- Add cow foot and stir for about 2 minutes, adding a little water if needed.
- Pour in 8-10 cups of water, bring to a boil, and then simmer for 2-3 hours.
- About 20 minutes before serving, add yam, carrot, and green onion, cooking until yam is tender.
- Adjust seasonings and thickness of the soup before serving warm.
