Goat Pepper Soup

Ingredients

The soup

  • 3 pounds goat meat cut in pieces
  • 1 medium chopped onion
  • 4-5 cloves garlic
  • 2 tablespoons chopped ginger
  • 1 tablespoon paprika
  • 1 leaf bay leaf
  • 1 tablespoon Maggi or bouillon granules
  • 2 stalks green onion chopped whites and green parts
  • ¼ cup basil
  • ¼ cup parsley
  • 0-3 pieces Scotch bonnet or habanera pepper
  • to taste salt and white pepper

Optional ingredients

  • 1-2 tablespoons Njansa
  • 1 piece calabash pepper peeled
  • 2 pieces Negro pepper
  • ½ teaspoon grains of paradise
  • 3-4 pieces green plantains peeled and cut into 2-3 pieces

Instructions

  1. Blend all the spices until pureed.
  2. Add the goat meat to a pot with about 7-8 cups of water.
  3. Bring to a boil and simmer until the goat is tender.
  4. Discard the bay leaf and add water if necessary.
  5. Add the plantains and cook for about 20 more minutes.
  6. Adjust the seasonings and thickness to taste, then serve warm.
