Ingredients

Main Ingredients

  • 2-3 pounds yam
  • 1½-2½ pounds chicken
  • ¼ cup canola or vegetable oil
  • 3 pieces fresh tomatoes
  • ½ medium onion
  • 3 cloves garlic
  • 1 teaspoon creole seasoning spice
  • ½ teaspoon white pepper
  • 1 tablespoon smoked paprika (optional)
  • 1 piece habanero pepper or scotch bonnet (optional)
  • 3-4 cups fresh leafy greens

Optional Ingredients

  • ¼ cup ground crayfish
  • 2 tablespoons palm oil
  • ½ tablespoon chicken bouillon powder

Instructions

  1. Peel the yam carefully and cut into large chunks, washing them immediately to prevent discoloration.
  2. Blend the tomatoes, onion, and garlic together until smooth.
  3. Heat oil in a non-stick pan or Dutch oven and add the blended mixture, cooking for about 5 minutes.
  4. Add chicken, bouillon, white pepper, and creole seasoning, and sauté until the chicken is tender, about 25 minutes.
  5. Slowly add the yam chunks and cook on medium heat for about 15 minutes, adding water as needed.
  6. Add the leafy greens and mix, letting it simmer for about 2 minutes.
  7. Adjust seasoning with salt and pepper, then serve warm.
