Instructions
- Peel the yam carefully and cut into large chunks, washing them immediately to prevent discoloration.
- Blend the tomatoes, onion, and garlic together until smooth.
- Heat oil in a non-stick pan or Dutch oven and add the blended mixture, cooking for about 5 minutes.
- Add chicken, bouillon, white pepper, and creole seasoning, and sauté until the chicken is tender, about 25 minutes.
- Slowly add the yam chunks and cook on medium heat for about 15 minutes, adding water as needed.
- Add the leafy greens and mix, letting it simmer for about 2 minutes.
- Adjust seasoning with salt and pepper, then serve warm.
