Sweet Potato Hash with Fried Eggs

Ingredients

The hash

  • 1 large garnet yam
  • 1 big pinch kosher salt
  • several turns of freshly ground black pepper
  • a few shakes of garlic powder
  • a couple of dashes of onion powder
  • a sprinkle of dried herbs
  • 2 tablespoons fat of choice
  • to taste Aleppo pepper (optional)

The eggs

  • 4 large eggs
  • 2 tablespoons ghee or avocado oil
  • to taste kosher salt
  • to taste freshly ground black pepper
  • to taste Aleppo pepper (optional)

Instructions

  1. Peel and cut the yam lengthwise for the food processor.
  2. Shred the yams using a julienne slicer or spiralizer.
  3. Toss the shredded yams in a bowl with salt, pepper, garlic powder, onion powder, and dried herbs.
  4. Heat the fat in a skillet over medium heat and add the seasoned yams.
  5. Stir-fry the yams for a minute, then cover and cook until tender with crunchy bits.
  6. Plate the hash and optionally add Aleppo pepper.
  7. In a separate skillet, heat ghee or oil and fry two eggs at a time, seasoning with salt and pepper.
  8. Top the hash with the fried eggs and sprinkle with Aleppo pepper.
