Sweet Potato Hash with Fried Eggs

Instructions
- Peel and cut the yam lengthwise for the food processor.
- Shred the yams using a julienne slicer or spiralizer.
- Toss the shredded yams in a bowl with salt, pepper, garlic powder, onion powder, and dried herbs.
- Heat the fat in a skillet over medium heat and add the seasoned yams.
- Stir-fry the yams for a minute, then cover and cook until tender with crunchy bits.
- Plate the hash and optionally add Aleppo pepper.
- In a separate skillet, heat ghee or oil and fry two eggs at a time, seasoning with salt and pepper.
- Top the hash with the fried eggs and sprinkle with Aleppo pepper.
