Instructions
- Preheat the oven to 350℉ (177℃).
- Wash, peel, and cut the yams into about ½ inch thick pieces.
- Place the yams in a 13x9 casserole dish in an even layer.
- In a medium skillet, melt the butter over medium heat.
- Add brown sugar, granulated sugar, maple syrup, ground ginger, cinnamon, allspice, and nutmeg to the melted butter.
- Bring the mixture to a boil, stirring until the sugar is dissolved, about 3-4 minutes.
- Remove from heat and stir in orange juice and lemon juice.
- Pour the butter mixture over the yams, ensuring they are well coated.
- Cover the dish with aluminum foil and bake for 25-30 minutes.
- Remove the foil, stir the yams, and bake uncovered for an additional 30 minutes until tender.
- Stir in vanilla extract and serve warm, optionally topped with pecans.
