Ingredients

The yams

  • 3-3½ pound sweet potatoes or yams

The glaze

  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 3-4 tablespoon maple syrup
  • ½-1 teaspoon ground ginger
  • 2 teaspoon cinnamon
  • 1 teaspoon allspice
  • ½ teaspoon nutmeg
  • 2 tablespoon orange juice
  • 1-2 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350℉ (177℃).
  2. Wash, peel, and cut the yams into about ½ inch thick pieces.
  3. Place the yams in a 13x9 casserole dish in an even layer.
  4. In a medium skillet, melt the butter over medium heat.
  5. Add brown sugar, granulated sugar, maple syrup, ground ginger, cinnamon, allspice, and nutmeg to the melted butter.
  6. Bring the mixture to a boil, stirring until the sugar is dissolved, about 3-4 minutes.
  7. Remove from heat and stir in orange juice and lemon juice.
  8. Pour the butter mixture over the yams, ensuring they are well coated.
  9. Cover the dish with aluminum foil and bake for 25-30 minutes.
  10. Remove the foil, stir the yams, and bake uncovered for an additional 30 minutes until tender.
  11. Stir in vanilla extract and serve warm, optionally topped with pecans.
