Vegan Candied Yams

Instructions
- Preheat the oven to 400°F.
- Peel the yams and cut them into ½-inch rounds, then place them in a 9x13-inch baking dish.
- In a saucepan over medium heat, melt the vegan butter until it begins to sputter.
- Add the brown sugar, orange zest, salt, cinnamon, nutmeg, ginger, and maple syrup to the melted butter, stirring until fully mixed, then remove from heat and add the vanilla.
- Pour the sauce over the yams and toss to coat them evenly.
- Cover the baking dish with aluminum foil and bake for 20 minutes until the yams are fork-tender.
- Remove the foil, spoon the sauce over the yams, and bake uncovered for an additional 15-20 minutes until the sauce thickens.
- Serve hot, optionally sprinkled with pecans.
