Ingredients

The yams

  • 4 medium yams or sweet potatoes

The sauce

  • ½ cup vegan unsalted butter
  • ¼ cup light brown sugar
  • ¼ cup maple syrup
  • 1 large orange (zested)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • 2 teaspoons pure vanilla extract
  • to taste chopped pecans (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Peel the yams and cut them into ½-inch rounds, then place them in a 9x13-inch baking dish.
  3. In a saucepan over medium heat, melt the vegan butter until it begins to sputter.
  4. Add the brown sugar, orange zest, salt, cinnamon, nutmeg, ginger, and maple syrup to the melted butter, stirring until fully mixed, then remove from heat and add the vanilla.
  5. Pour the sauce over the yams and toss to coat them evenly.
  6. Cover the baking dish with aluminum foil and bake for 20 minutes until the yams are fork-tender.
  7. Remove the foil, spoon the sauce over the yams, and bake uncovered for an additional 15-20 minutes until the sauce thickens.
  8. Serve hot, optionally sprinkled with pecans.
