Instructions
- Heat oil in a saucepan and sauté onions, garlic, thyme, smoked paprika, and hot pepper for about a minute.
- Add diced tomatoes and cook for 5-7 minutes.
- Stir in the rice and continue stirring for about 2 minutes.
- Add the cooked beans and chicken stock/water, bring to a boil.
- Reduce heat and simmer until rice is cooked, about 18 minutes, stirring occasionally.
- Adjust seasoning with salt and pepper as needed.
- Serve warm with chicken, stew, or vegetables.
