Ingredients

The base

  • 2 cups washed long grain rice
  • 2 cups cooked beans
  • 4½ - 5 cups chicken broth or water

The flavoring

  • ½ cup red/palm/canola oil
  • 2-3 cloves garlic
  • 1 medium onion
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ scotch bonnet pepper or ½ teaspoon cayenne pepper
  • 4 tomatoes
  • 1 tablespoon salt
  • ¼ cup crayfish (optional)
  • 1 teaspoon chicken bouillon (optional)

Instructions

  1. Heat oil in a saucepan and sauté onions, garlic, thyme, smoked paprika, and hot pepper for about a minute.
  2. Add diced tomatoes and cook for 5-7 minutes.
  3. Stir in the rice and continue stirring for about 2 minutes.
  4. Add the cooked beans and chicken stock/water, bring to a boil.
  5. Reduce heat and simmer until rice is cooked, about 18 minutes, stirring occasionally.
  6. Adjust seasoning with salt and pepper as needed.
  7. Serve warm with chicken, stew, or vegetables.
