Instructions
- Soak the red beans in water for 8 hours, then drain.
- In a large pot, melt butter and sauté minced garlic, onion, celery, green pepper, parsley, and green onion for 7 minutes.
- Add paprika, all spice, cumin, thyme, and bay leaves, cooking for an additional 3 minutes.
- Slice the beef sausage and set aside.
- Add the soaked red beans, chicken broth, and coconut milk to the pot and bring to a boil.
- Once boiling, reduce heat and cover, cooking for 30 minutes.
- Stir in the beef sausage, red pepper, white pepper, and sea salt, then cook for 30 minutes to 1 hour and 30 minutes more.
- Prepare rice according to package instructions and set aside.
- Once the red beans are cooked, allow to cool slightly before serving with rice.
