Easy Red Beans and Rice

Cajun seasoning or cayenne pepper (optional)

Instructions
- 1. Sauté the sausage, onion, capsicum, celery, and garlic in olive oil until the onion is translucent and the sausage begins to brown.
- 2. Add the tomato paste and sauté for another minute, mixing well.
- 3. Stir in the kidney beans and chicken stock, bring to a boil, then cover and reduce to a simmer.
- 4. Simmer until the mixture thickens, seasoning with salt, pepper, and optional Cajun seasoning to taste.
- 5. Serve the red beans over steamed rice.
