Easy Red Beans and Rice

Ingredients

  • 1 piece smoked andouille sausage or chorizo sausage
  • 1 small onion
  • 1 piece green capsicum/bell pepper
  • 4 ribs celery
  • 2 cloves garlic
  • 2 tsp olive oil
  • 2 tbsp tomato paste
  • 1 can red kidney beans
  • 2 cups chicken stock
  • to taste salt and pepper
  • to taste Cajun seasoning or cayenne pepper (optional)
  • to serve steamed rice

Instructions

  1. 1. Sauté the sausage, onion, capsicum, celery, and garlic in olive oil until the onion is translucent and the sausage begins to brown.
  2. 2. Add the tomato paste and sauté for another minute, mixing well.
  3. 3. Stir in the kidney beans and chicken stock, bring to a boil, then cover and reduce to a simmer.
  4. 4. Simmer until the mixture thickens, seasoning with salt, pepper, and optional Cajun seasoning to taste.
  5. 5. Serve the red beans over steamed rice.
