Ingredients

The base

  • 1 tablespoon coconut oil
  • 1 cup onion, chopped
  • 3 cloves garlic, diced
  • 1 tablespoon ginger, grated or minced
  • 1 whole Serrano chili, diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin

The main ingredients

  • 2 cups yams, cubed
  • 1 can chickpeas (garbanzos), drained
  • 2 tablespoons tomato paste
  • 1 cup diced tomatoes
  • 4 cups vegetable broth or chicken stock
  • ½–1 cup creamy natural peanut butter
  • 1–1½ teaspoons sea salt
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon apple cider vinegar
  • ½ pound spinach

Garnishes

  • to taste cilantro
  • to taste crushed peanuts
  • to taste red pepper flakes

Instructions

  1. Sauté coconut oil, onion, garlic, ginger, and serrano chili in a pot.
  2. Add smoked paprika, black pepper, coriander, and cumin, cooking until onions soften.
  3. Stir in yams, chickpeas, tomato paste, diced tomatoes, broth, peanut butter, salt, and red pepper flakes.
  4. Bring to a simmer and cook until yams are fork-tender, about 20-30 minutes.
  5. Add apple cider vinegar and adjust salt to taste, then stir in spinach.
