Instructions
- Sauté coconut oil, onion, garlic, ginger, and serrano chili in a pot.
- Add smoked paprika, black pepper, coriander, and cumin, cooking until onions soften.
- Stir in yams, chickpeas, tomato paste, diced tomatoes, broth, peanut butter, salt, and red pepper flakes.
- Bring to a simmer and cook until yams are fork-tender, about 20-30 minutes.
- Add apple cider vinegar and adjust salt to taste, then stir in spinach.
