Ingredients

  • ¼ cup oil
  • 2-3 pounds chicken legs or thighs
  • 1 teaspoon paprika
  • 2 fresh tomatoes
  • 1 medium onion, chopped
  • 4 cloves garlic
  • ½ teaspoon ginger, chopped
  • 3 tablespoons parsley
  • ½ cup peanut butter or peanut paste
  • 1 teaspoon chicken bouillon (optional)
  • ½ teaspoon cayenne pepper
  • to taste salt and pepper

Instructions

  1. 1. Season the chicken with your preferred seasoning and set aside.
  2. 2. Blend the tomatoes, half of the onion, garlic, parsley, and ginger, then set aside.
  3. 3. In a large pot, heat oil over medium heat, add the chicken, and brown on both sides for about 5-10 minutes. Remove chicken and set aside.
  4. 4. Add the remaining onions to the pot and stir for about 2 minutes, then add the blended tomato mixture and paprika.
  5. 5. Bring the tomato mixture to a boil, then let it simmer for about 5 minutes, stirring frequently.
  6. 6. Add the peanut butter, chicken, and 2 cups of water or chicken stock. Season with chicken bouillon, salt, and cayenne pepper.
  7. 7. Let it simmer for about 10 minutes, adjusting the thickness with more water or stock if necessary.
  8. 8. Once satisfied with the thickness, serve the stew with rice.
