African Peanut Stew

Instructions
- 1. Season the chicken with your preferred seasoning and set aside.
- 2. Blend the tomatoes, half of the onion, garlic, parsley, and ginger, then set aside.
- 3. In a large pot, heat oil over medium heat, add the chicken, and brown on both sides for about 5-10 minutes. Remove chicken and set aside.
- 4. Add the remaining onions to the pot and stir for about 2 minutes, then add the blended tomato mixture and paprika.
- 5. Bring the tomato mixture to a boil, then let it simmer for about 5 minutes, stirring frequently.
- 6. Add the peanut butter, chicken, and 2 cups of water or chicken stock. Season with chicken bouillon, salt, and cayenne pepper.
- 7. Let it simmer for about 10 minutes, adjusting the thickness with more water or stock if necessary.
- 8. Once satisfied with the thickness, serve the stew with rice.
