Chicken Stew (African Style)

Ingredients

The chicken

  • 3-3½ pound chicken, cut in pieces
  • to taste none salt
  • 1-2 teaspoon Creole seasoning

The sauce

  • ¼-½ cup oil (canola, olive, or vegetable)
  • 5-6 none Roma tomatoes (or 2 cups tomato sauce)
  • 1 medium onion, sliced
  • 1 tablespoon garlic, minced (3-4 cloves)
  • teaspoon dried thyme
  • 1 tablespoon smoked paprika
  • ¼ teaspoon curry powder
  • 1 none bay leaf
  • 1 tablespoon Maggi or bouillon (chicken-flavored)
  • 2 cups water

The vegetables

  • 2 none green onions, chopped (whites and green parts)
  • 3 tablespoon parsley
  • 1-2 cups carrot, sliced

Instructions

  1. Season the chicken with salt, pepper, and Creole seasoning, then set aside.
  2. Heat oil in a large pot over medium heat until hot, then add the chicken and sauté until browned.
  3. If using fresh tomatoes, blend them with onions and garlic. If using tomato sauce, sauté the onion and garlic until tender.
  4. Pour the tomato blend (or sauce) into the pot with the chicken, add thyme, smoked paprika, curry powder, bay leaf, and bouillon.
  5. Bring to a boil and let simmer for 20-30 minutes, stirring frequently.
  6. Add carrots, green onions, and parsley, and cook for an additional 5 minutes.
  7. Adjust the thickness of the stew with water or stock, season with salt to taste, and remove the bay leaf.
  8. Serve over warm rice.
