Chicken Stew (African Style)

Instructions
- Season the chicken with salt, pepper, and Creole seasoning, then set aside.
- Heat oil in a large pot over medium heat until hot, then add the chicken and sauté until browned.
- If using fresh tomatoes, blend them with onions and garlic. If using tomato sauce, sauté the onion and garlic until tender.
- Pour the tomato blend (or sauce) into the pot with the chicken, add thyme, smoked paprika, curry powder, bay leaf, and bouillon.
- Bring to a boil and let simmer for 20-30 minutes, stirring frequently.
- Add carrots, green onions, and parsley, and cook for an additional 5 minutes.
- Adjust the thickness of the stew with water or stock, season with salt to taste, and remove the bay leaf.
- Serve over warm rice.
