African Peanut Soup

Instructions
- Heat the vegetable stock in a pot over medium-high heat.
- Add all ingredients except peanut butter, cilantro, and peanuts, and cook for 15 minutes.
- Remove 1 cup of the liquid and mix it with the peanut butter until creamy.
- Return the peanut butter mixture to the pot, stir well, and cook for an additional 5 minutes.
- Stir in the cilantro and garnish with peanuts before serving.
