Ingredients

  • 12 oz peanuts, skin peeled
  • 8 cups water
  • rock sugar to taste rock sugar
  • 3-4 tablespoons coconut milk (optional)

Instructions

  1. Soak the peanuts overnight in water, ensuring they are fully submerged.
  2. Rinse the peanuts thoroughly and transfer them to a pressure cooker with 8 cups of water.
  3. Pressure cook the peanut soup on high heat for 15 minutes, then reduce to medium heat and cook for an additional 30-40 minutes.
  4. Turn off the heat and allow it to cool before safely removing the lid.
  5. Reheat the soup over medium to low heat and add rock sugar to taste, boiling until the peanuts are soft.
  6. Add the coconut milk towards the end, boil for 1 minute, then turn off the heat and serve immediately.
