Instructions
- Season the chicken with paprika, half of the onion, salt, and pepper, then set aside.
- In a large pot, heat oil over low heat, add the chicken, and sauté while stirring frequently to deglaze the pot.
- Blend the tomatoes, remaining onion, garlic, and parsley together.
- Pour the blended mixture into the pot with the chicken, bring to a boil, and let it simmer until the chicken is tender.
- Add the peanut butter and 2 cups of water, then let it simmer for 5 minutes.
- Adjust the thickness of the soup with additional water if necessary, then simmer to the desired thickness.
- Check the thickness by dripping some soup from a spoon, and serve when satisfied.
