Ingredients

The Sauce

  • 1 cup tomato sauce or plain diced canned tomatoes
  • ½ cup natural creamy peanut butter (no stir)
  • 2 teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • 1 teaspoon cayenne pepper (optional)
  • ½ teaspoon sea salt or kosher salt
  • ½ teaspoon black pepper

The Stew

  • ½ to 1 Tablespoon cooking oil
  • 1 lb diced stew meat (optional)
  • 2 cups broth (2 ½ cups if adding meat)
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 Tablespoon grated fresh ginger or 1 teaspoon ground ginger
  • 10 ounces sweet potatoes, peeled and diced
  • cup peeled and sliced carrot (optional)
  • 2 cups spinach leaves or 3 cups baby spinach

For Serving

  • as needed cooked white or brown rice, cauliflower rice, or quinoa
  • as needed fresh cilantro, chopped
  • as needed dry roasted peanuts, finely chopped
  • as needed spicy chilies of choice

Instructions

  1. Make the sauce by blending all sauce ingredients until combined.
  2. For stove top, heat a pot and sauté onions, add meat if using, then add garlic and ginger.
  3. Add sweet potatoes, then the sauce, peanut butter, spices, spinach, and broth.
  4. Simmer covered for 40-60 minutes until sweet potatoes are tender.
  5. For Instant Pot, sauté onions and garlic, add meat if using, then remaining ingredients and cook on high for 20 minutes.
  6. For Crock Pot, add vegetables and broth, then the sauce, and cook on low for 4.5 to 5 hours or high for 3 hours.
  7. Serve over rice and garnish with cilantro, peanuts, and chilies.
