African Peanut Stew

Instructions
- Make the sauce by blending all sauce ingredients until combined.
- For stove top, heat a pot and sauté onions, add meat if using, then add garlic and ginger.
- Add sweet potatoes, then the sauce, peanut butter, spices, spinach, and broth.
- Simmer covered for 40-60 minutes until sweet potatoes are tender.
- For Instant Pot, sauté onions and garlic, add meat if using, then remaining ingredients and cook on high for 20 minutes.
- For Crock Pot, add vegetables and broth, then the sauce, and cook on low for 4.5 to 5 hours or high for 3 hours.
- Serve over rice and garnish with cilantro, peanuts, and chilies.
