Instructions
- Sauté the onion, ginger, and garlic in olive oil until soft.
- Dice the sweet potato and add it to the pot with cumin and red pepper, sautéing for a few more minutes.
- Stir in the tomato paste, peanut butter, and vegetable broth, then bring to a boil.
- Reduce heat and simmer for 15-20 minutes until sweet potatoes are soft.
- Prepare collard greens by removing stems and slicing leaves, then rinse well.
- Add collard greens to the stew and simmer for another 5 minutes.
- Mash some sweet potatoes against the pot to thicken the stew.
- Serve with rice, peanuts, cilantro, and sriracha if desired.
