Vegan Peanut Stew

Ingredients

The stew

  • 1 Tbsp olive oil
  • 4 cloves garlic
  • 1 Tbsp grated fresh ginger
  • 1 lb. sweet potato
  • 1 medium onion
  • 1 tsp cumin
  • ¼ tsp crushed red pepper
  • 1 6 oz. can tomato paste
  • ½ cup natural style peanut butter
  • 6 cups vegetable broth
  • ½ bunch collard greens

Optional garnishes

  • ¼ bunch cilantro
  • 4.5 cups cooked brown rice
  • cup chopped peanuts

Instructions

  1. Sauté the onion, ginger, and garlic in olive oil until soft.
  2. Dice the sweet potato and add it to the pot with cumin and red pepper, sautéing for a few more minutes.
  3. Stir in the tomato paste, peanut butter, and vegetable broth, then bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes until sweet potatoes are soft.
  5. Prepare collard greens by removing stems and slicing leaves, then rinse well.
  6. Add collard greens to the stew and simmer for another 5 minutes.
  7. Mash some sweet potatoes against the pot to thicken the stew.
  8. Serve with rice, peanuts, cilantro, and sriracha if desired.
