Instructions
- 1. Dice the onion and mince the garlic, then cook in olive oil over medium heat until soft.
- 2. Add tomato paste and cook for another 3-4 minutes until caramelized.
- 3. Peel and dice the potato and carrots, and rinse the lentils.
- 4. Add carrots, potato, lentils, vegetable broth, cumin, smoked paprika, and cayenne pepper to the pot.
- 5. Stir well, cover, and bring to a boil, then reduce heat to simmer for 30 minutes.
- 6. After simmering, stir and add salt to taste, then serve hot.
