Vegan Red Lentil Stew

Ingredients

  • 2 Tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 3 oz tomato paste
  • 1 cup dry red lentils
  • ½ lb carrots
  • 1 medium potato
  • 6 cups vegetable broth
  • 1 Tbsp cumin
  • 1 tsp smoked paprika
  • ¾ tsp salt
  • tsp cayenne pepper

Instructions

  1. 1. Dice the onion and mince the garlic, then cook in olive oil over medium heat until soft.
  2. 2. Add tomato paste and cook for another 3-4 minutes until caramelized.
  3. 3. Peel and dice the potato and carrots, and rinse the lentils.
  4. 4. Add carrots, potato, lentils, vegetable broth, cumin, smoked paprika, and cayenne pepper to the pot.
  5. 5. Stir well, cover, and bring to a boil, then reduce heat to simmer for 30 minutes.
  6. 6. After simmering, stir and add salt to taste, then serve hot.
