Quick Smoky Red Lentil Stew

Ingredients

  • 3 tablespoons olive oil
  • 2 large carrots, small dice
  • 1 medium yellow onion, small dice
  • 2 stalks celery, small dice
  • 3 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons smoked paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 1 ¼ cups red lentils, rinsed
  • 4 cups vegetable stock
  • to taste sea salt and ground black pepper
  • 2 tablespoons fresh lemon juice (from ½ a large lemon)
  • to taste chopped fresh herbs for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced carrots, onion, and celery; sauté until onion is translucent.
  3. Stir in minced garlic and cook until fragrant.
  4. Add balsamic vinegar, smoked paprika, cumin, cayenne, and lentils; stir well.
  5. Pour in vegetable stock, season with salt and pepper, and bring to a simmer.
  6. Cover partially and simmer for 7-10 minutes until lentils are cooked to your liking.
  7. Stir in lemon juice before serving.
  8. Serve hot with fresh herbs and extra lemon.
