Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced carrots, onion, and celery; sauté until onion is translucent.
- Stir in minced garlic and cook until fragrant.
- Add balsamic vinegar, smoked paprika, cumin, cayenne, and lentils; stir well.
- Pour in vegetable stock, season with salt and pepper, and bring to a simmer.
- Cover partially and simmer for 7-10 minutes until lentils are cooked to your liking.
- Stir in lemon juice before serving.
- Serve hot with fresh herbs and extra lemon.
