Ingredients

  • 2 Tbsp. olive oil
  • 1 cup chopped white onion
  • ½ cup chopped celery
  • ½ cup chopped carrots
  • ½ cup diced roasted red pepper
  • 3 cloves garlic, chopped
  • 3 cups chicken or vegetable broth
  • 1 cup red lentils
  • 1 tsp. smoked paprika

Instructions

  1. Heat olive oil in a saucepan over medium-high heat.
  2. Add onion, celery, carrots, roasted red pepper, and garlic; sauté for about 5 minutes until the onion is translucent.
  3. Add broth, lentils, and smoked paprika.
  4. Reduce heat to medium-low and simmer for 20-30 minutes until lentils are cooked.
  5. Serve warm.
