Ingredients

  • 1 tablespoon olive oil
  • 1 cup yellow onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • ¼ cup tomato paste
  • 5 cups water
  • 1 cup dry red lentils
  • 1½ to 2 teaspoons fine sea salt
  • ½ cup canned coconut milk
  • cup fresh cilantro, chopped
  • 1 tablespoon freshly squeezed lemon juice
  • pinch cayenne pepper (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat and sauté onion, carrots, and celery until soft.
  2. Add garlic, cumin, cayenne (if using), and tomato paste, stirring briefly.
  3. Pour in water, add lentils and salt, and bring to a boil.
  4. Lower the heat, cover, and simmer until lentils are tender.
  5. Stir in coconut milk, cilantro, and lemon juice, adjusting seasoning to taste.
  6. Serve warm, garnished with extra cilantro if desired.
