Instructions
- Heat olive oil in a large pot over medium-high heat and sauté onion, carrots, and celery until soft.
- Add garlic, cumin, cayenne (if using), and tomato paste, stirring briefly.
- Pour in water, add lentils and salt, and bring to a boil.
- Lower the heat, cover, and simmer until lentils are tender.
- Stir in coconut milk, cilantro, and lemon juice, adjusting seasoning to taste.
- Serve warm, garnished with extra cilantro if desired.
