Ingredients

The base

  • 1 tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • ½ medium serrano chili, diced
  • 1 tbsp minced ginger
  • 1 tbsp ground cumin
  • 1 cup red lentils, rinsed
  • 8 cups water
  • 2 cups chopped sweet root veggies (e.g., rutabaga, parsnip, or turnip)

The finishing touches

  • 1 medium lemon, juiced
  • ¼ cup fresh chopped cilantro
  • 2 medium scallions, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat, then add garlic, onion, and chili; sauté until tender.
  2. Stir in lentils and water, bring to a boil, skimming off any foam.
  3. Reduce heat, add root veggies and cumin, cover, and simmer for 1 hour, stirring occasionally.
  4. Add lemon juice and cilantro, then serve topped with scallions.
