Instructions
- Heat olive oil in a large pot over medium heat, then add garlic, onion, and chili; sauté until tender.
- Stir in lentils and water, bring to a boil, skimming off any foam.
- Reduce heat, add root veggies and cumin, cover, and simmer for 1 hour, stirring occasionally.
- Add lemon juice and cilantro, then serve topped with scallions.
