Ingredients

The main ingredients

  • 2 medium yellow onions
  • 2 lbs boneless skinless chicken breast
  • 1 medium red bell pepper
  • 3 medium carrots
  • 1 15-oz can tomato sauce
  • 1 6-oz can tomato paste
  • ½ lemon juice of
  • 2 cloves garlic
  • 1 tablespoon minced fresh ginger
  • 3 tablespoons curry powder
  • 2 teaspoons garam masala
  • ½ teaspoon fine salt
  • 1 tablespoon salted butter
  • ½ cup plain Greek yogurt
  • ½ cup half-and-half

For serving (optional)

  • as needed cooked white rice or cauliflower rice
  • as needed naan
  • as needed chopped fresh cilantro
  • as needed lime wedges
  • as needed toasted sesame seeds

Instructions

  1. Layer sliced onions in the slow cooker.
  2. In a bowl, combine chicken, bell pepper, carrots, tomato sauce, tomato paste, lemon juice, garlic, ginger, curry powder, garam masala, and salt; mix well.
  3. Add the chicken mixture to the slow cooker on top of the onions.
  4. Dot the butter pieces over the mixture.
  5. Cover and cook on high for 4 ½ hours or low for 6 ½ hours.
  6. After cooking, stir in yogurt and half-and-half once the mixture has cooled slightly.
  7. Serve over rice or cauliflower rice, garnished with cilantro and sesame seeds.
