Ingredients

The Grits

  • 1 cup stone ground grits

The Cooking Liquid

  • cups water
  • 2 cups unsweetened soy milk

The Seasoning

  • teaspoon salt
  • ¼ cup nutritional yeast (optional)

The Cooking Fat

  • 1 tablespoon oil or vegan butter

Instructions

  1. 1. Use the 'saute' function on the Instant Pot to heat the oil or vegan butter.
  2. 2. Add the grits and saute for 2 minutes, stirring often.
  3. 3. Sprinkle in the salt, then add the water and soy milk.
  4. 4. If desired, add nutritional yeast for a cheesy flavor.
  5. 5. Lock the lid and set the pressure valve to sealing.
  6. 6. Cook on high pressure for 13 minutes.
  7. 7. After cooking, let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
  8. 8. Saute off any extra liquid if needed or stir in a splash of milk.
  9. 9. Taste and adjust seasoning with salt and pepper before serving.
