Instant Pot Vegan Mashed Potatoes

Ingredients

The potatoes

  • 5 medium potatoes, peeled, halved

The cooking liquid and seasoning

  • Water as needed water
  • tablespoons vegan butter or margarine
  • ½–⅔ cup plant-based milk, plain, unsweetened
  • Salt as desired salt
  • Black pepper as desired black pepper

Instructions

  1. Place the peeled, halved potatoes in the Instant Pot and add enough water to cover them.
  2. Secure the Instant Pot lid and select the Manual/Pressure Cook setting to cook for 10 minutes.
  3. Use the quick release button and check if the potatoes are tender enough to pierce with a fork.
  4. Drain the water from the pot and mash the potatoes using a potato masher or electric mixer.
  5. Add the vegan butter and enough plant-based milk to achieve your desired texture, then season with salt and pepper.
