Ingredients

The potatoes

  • 2 pounds white, red, or gold potatoes

The liquid

  • 1 cup broth or water

The creaminess

  • 3 tablespoons butter, ghee, or vegan butter
  • ¼ cup unsweetened almond milk

The seasonings

  • 2 teaspoons sea salt
  • ½ teaspoon freshly-ground black pepper

Instructions

  1. Scrub the potatoes and cut them in half.
  2. Add the potatoes to the Instant Pot along with the water or broth.
  3. Lock the lid and set the pressure cooking time to 8 minutes.
  4. After cooking, let the pressure release naturally for 5 minutes, then use quick release for any remaining pressure.
  5. Mash the potatoes using a masher or mixer.
  6. Stir in the ghee or butter until combined.
  7. Add the almond milk and mix well.
  8. Serve hot, seasoned with salt and pepper to taste.
