Ingredients

The potatoes

  • 2 pounds Russet or Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 2 cups water

The seasoning and dairy

  • ¼ cup milk of choice
  • 2 tablespoons unsalted butter
  • ¼ cup sour cream or plain Greek yogurt (optional)
  • to taste fine salt and black pepper

For garnish

  • to taste finely chopped parsley

Instructions

  1. Combine the potatoes, water, and a dash of salt in the Instant Pot, lock the lid, and set the vent to sealing.
  2. Cook at high pressure for 8 minutes, then quick-release the pressure and check for doneness.
  3. If needed, cook for an additional 1-2 minutes.
  4. Drain the potatoes and transfer them to a bowl, adding butter, milk, and sour cream.
  5. Mash the potatoes until light and fluffy, then season with salt and pepper to taste.
  6. Serve warm or keep in the Instant Pot on warm.
