Instant Pot Mashed Potatoes

Instructions
- Combine the potatoes, water, and a dash of salt in the Instant Pot, lock the lid, and set the vent to sealing.
- Cook at high pressure for 8 minutes, then quick-release the pressure and check for doneness.
- If needed, cook for an additional 1-2 minutes.
- Drain the potatoes and transfer them to a bowl, adding butter, milk, and sour cream.
- Mash the potatoes until light and fluffy, then season with salt and pepper to taste.
- Serve warm or keep in the Instant Pot on warm.
