Instant Pot Mashed Potatoes

Instructions
- Prep the potatoes by scrubbing, peeling, and cutting them into large chunks.
- Place the chopped potatoes, water, and 2 teaspoons of salt in the Instant Pot.
- Secure the lid and pressure cook on High for 12 minutes.
- Quick release the pressure, reserve ¾ cup of the cooking water, and drain the potatoes.
- Return the potatoes to the pot and add garlic, olive oil, butter, and the remaining salt.
- Mash the potatoes well and gradually add the reserved cooking water until smooth and creamy.
- Season with black pepper and garnish with chives before serving.
