Ingredients

The potatoes

  • 4 pounds potatoes, peeled and cut into 1-inch cubes
  • 2 teaspoons coarse, kosher salt

The mixture

  • 1 cup milk, preferably not skim
  • 4 tablespoons butter, cut into tablespoon-size pieces
  • ½ teaspoon garlic powder
  • ½ cup sour cream

Instructions

  1. Add the potatoes and salt to the Instant Pot insert and cover with at least 1½ cups of water.
  2. Secure the lid on the Instant Pot and set the valve to 'seal'.
  3. Select Manual and set the timer for 8 minutes.
  4. While the potatoes cook, warm the milk, butter, and garlic powder until the butter is melted.
  5. Once the potatoes are done, quick release the pressure and drain them.
  6. Return the potatoes to the insert and coarsely mash them.
  7. Mix in ⅔ of the butter/milk mixture and the sour cream, mashing until desired texture is achieved.
  8. Add salt and pepper to taste.
  9. Serve immediately or keep warm in the Instant Pot for up to three hours.
