Instant Pot Mashed Potatoes
Ingredients
The potatoes

potatoes, peeled and cut into 1-inch cubes

coarse, kosher salt
The mixture

milk, preferably not skim

tablespoons
butter, cut into tablespoon-size pieces

teaspoon
garlic powder

sour cream
Instructions
- Add the potatoes and salt to the Instant Pot insert and cover with at least 1½ cups of water.
- Secure the lid on the Instant Pot and set the valve to 'seal'.
- Select Manual and set the timer for 8 minutes.
- While the potatoes cook, warm the milk, butter, and garlic powder until the butter is melted.
- Once the potatoes are done, quick release the pressure and drain them.
- Return the potatoes to the insert and coarsely mash them.
- Mix in ⅔ of the butter/milk mixture and the sour cream, mashing until desired texture is achieved.
- Add salt and pepper to taste.
- Serve immediately or keep warm in the Instant Pot for up to three hours.
