Ingredients

The potatoes

  • 2 pounds russet potatoes, peeled and sliced into large chunks
  • 2-3 cloves garlic, minced
  • 2 cups water, enough to completely cover the potatoes

The creamy mixture

  • 2 oz cream cheese
  • ¼ cup sour cream
  • ¼ cup heavy cream
  • 1 tablespoon butter

Seasonings

  • 1 teaspoon onion powder
  • 1 teaspoon rosemary, fresh or jarred
  • to taste salt and pepper

Optional toppings

  • to taste fresh parsley
  • to taste paprika
  • to taste green onions
  • to taste chives

Instructions

  1. Peel and slice the potatoes into large chunks.
  2. Place the potatoes in the Instant Pot with minced garlic and enough water to cover them.
  3. Cook on Manual High Pressure for 10 minutes.
  4. Once cooking is complete, quick release the steam.
  5. Drain the excess water from the pot.
  6. Mash the potatoes and add cream cheese, sour cream, heavy cream, butter, onion powder, rosemary, salt, and pepper.
  7. Continue to mash until fluffy, adjusting with water or milk if needed.
  8. Cool before serving.
