Ingredients

The potatoes

  • 2 ½ lbs russet potatoes
  • 1 ¾ tsp course kosher salt

The creamy mixture

  • ¾ cup half and half
  • 4 oz cream cheese
  • 3 cloves garlic
  • to taste freshly ground black pepper
  • for serving chopped chives

Instructions

  1. Add potatoes and 1 tsp salt to the Instant Pot and cover with cold water. Cook on high pressure for 10 minutes.
  2. While the potatoes cook, heat half and half, cream cheese, and garlic in a saucepan until simmering, then set aside.
  3. Drain the potatoes and return them to the Instant Pot. Mash them quickly, then add the cream mixture, remaining salt, and pepper.
  4. Mash until smooth, top with chives, and serve.
