Instant Pot Mashed Potatoes

Instructions
- Cut the potatoes in half and place them in the Instant Pot.
- Add 6 cups of water and 1 teaspoon of salt.
- Seal the lid and set to high pressure for 6 minutes.
- Manually release the pressure, covering the steam spout with a kitchen towel.
- Drain the potatoes, saving 1 cup of the potato water.
- Set the Instant Pot to the warm setting and return the drained potatoes, butter, sour cream, salt, and pepper.
- Mash and stir the mixture until smooth.
- Add some or all of the reserved potato water to adjust the consistency.
- Incorporate any optional additions and taste to adjust the salt.
- Keep warm until serving, garnishing with chives and melted butter.
