Instant Pot Mashed Potatoes

Ingredients

The potatoes

  • 3 lbs Yukon Gold potatoes
  • 6 cups water
  • 1 teaspoon salt

The mash

  • 4 tablespoons butter (or vegan butter)
  • ½ cup sour cream (or vegan sour cream)
  • 1-3 teaspoons granulated garlic
  • ½ teaspoon pepper
  • 1 teaspoon salt

Optional additions

  • 10-15 cloves roasted garlic
  • ¼-½ cup goat cheese
  • 1-2 tablespoons horseradish
  • to taste truffle oil

Garnishes

  • chives or scallions
  • mushroom gravy

Instructions

  1. Cut the potatoes in half and place them in the Instant Pot.
  2. Add 6 cups of water and 1 teaspoon of salt.
  3. Seal the lid and set to high pressure for 6 minutes.
  4. Manually release the pressure, covering the steam spout with a kitchen towel.
  5. Drain the potatoes, saving 1 cup of the potato water.
  6. Set the Instant Pot to the warm setting and return the drained potatoes, butter, sour cream, salt, and pepper.
  7. Mash and stir the mixture until smooth.
  8. Add some or all of the reserved potato water to adjust the consistency.
  9. Incorporate any optional additions and taste to adjust the salt.
  10. Keep warm until serving, garnishing with chives and melted butter.
