Vegan Mashed Potatoes

Ingredients

The potatoes

  • 3 lb starchy potatoes, peeled and cut into 1" chunks

The mash

  • 1 cup warm non-dairy milk
  • ¼ cup vegan butter
  • ¼ cup nutritional yeast
  • 1 clove garlic, minced
  • to taste salt
  • to taste ground white pepper

Instructions

  1. Peel, rinse, and cut the potatoes into 2" chunks.
  2. Cover the potatoes with cold salted water.
  3. Cook the potatoes until tender, about 20 minutes.
  4. Warm the non-dairy milk in a small pot.
  5. Drain the potatoes and let them dry briefly.
  6. Add more than half of the warm milk, vegan butter, nutritional yeast, and garlic to the potatoes and mash until combined.
  7. Switch to an electric mixer and whip the potatoes, adding more milk as needed until smooth.
  8. Adjust seasoning with salt and white pepper, then serve immediately.
