Vegan Mashed Potatoes

starchy potatoes, peeled and cut into 1" chunks

warm non-dairy milk

Instructions
- Peel, rinse, and cut the potatoes into 2" chunks.
- Cover the potatoes with cold salted water.
- Cook the potatoes until tender, about 20 minutes.
- Warm the non-dairy milk in a small pot.
- Drain the potatoes and let them dry briefly.
- Add more than half of the warm milk, vegan butter, nutritional yeast, and garlic to the potatoes and mash until combined.
- Switch to an electric mixer and whip the potatoes, adding more milk as needed until smooth.
- Adjust seasoning with salt and white pepper, then serve immediately.
