Vegan Mashed Potatoes

Ingredients

The potatoes

  • 24 ounces Yukon gold potatoes, cut in half & peeled

The mixture

  • 3 tablespoons vegan butter
  • ¾ cup coconut milk
  • 2 cloves garlic, finely minced
  • ½ – 1 teaspoon sea salt to taste

Instructions

  1. 1. Boil a pot of salted water or vegetable broth.
  2. 2. Add the potatoes and boil for about 20 minutes until fork-tender.
  3. 3. Drain the potatoes and place them in a bowl.
  4. 4. Mash the potatoes slightly with a potato masher.
  5. 5. In a separate bowl, microwave the coconut milk and vegan butter until melted.
  6. 6. Pour the melted mixture into the mashed potatoes.
  7. 7. Add the minced garlic and sea salt, then mash until smooth and creamy.
  8. 8. Serve with black pepper and an extra pat of butter if desired.
