Vegan Mashed Potatoes
Ingredients
The potatoes

Yukon gold potatoes, cut in half & peeled
The mixture

vegan butter

coconut milk

garlic, finely minced

sea salt to taste
Instructions
- 1. Boil a pot of salted water or vegetable broth.
- 2. Add the potatoes and boil for about 20 minutes until fork-tender.
- 3. Drain the potatoes and place them in a bowl.
- 4. Mash the potatoes slightly with a potato masher.
- 5. In a separate bowl, microwave the coconut milk and vegan butter until melted.
- 6. Pour the melted mixture into the mashed potatoes.
- 7. Add the minced garlic and sea salt, then mash until smooth and creamy.
- 8. Serve with black pepper and an extra pat of butter if desired.
