Vegan Garlic Mashed Potatoes with Caramelised Onions

Ingredients

The potatoes

  • 1 lb gold potatoes

The onions and garlic

  • ½ onion sliced
  • 2 cloves garlic, minced

The creamy mixture

  • 3 tablespoons vegan butter
  • ¾ cup coconut milk
  • ½ – 1 teaspoon salt

Instructions

  1. 1. Boil salted water in a pot and add peeled potatoes, cooking until fork tender.
  2. 2. While potatoes cook, heat 2 tablespoons of vegan butter in a pan over medium-high heat.
  3. 3. Add sliced onions to the pan, reduce heat to medium, and caramelize for about 15 minutes, stirring occasionally.
  4. 4. Drain the cooked potatoes and place them in a bowl. Mash briefly until broken up.
  5. 5. Heat the remaining vegan butter and coconut milk in the microwave until hot, then add to the mashed potatoes along with minced garlic and salt, mixing until combined.
  6. 6. Fold in the caramelized onions and let sit for a bit to enhance the flavor.
  7. 7. Serve with optional black pepper and an extra pat of vegan butter.
