Vegan Garlic Mashed Potatoes with Caramelised Onions

Instructions
- 1. Boil salted water in a pot and add peeled potatoes, cooking until fork tender.
- 2. While potatoes cook, heat 2 tablespoons of vegan butter in a pan over medium-high heat.
- 3. Add sliced onions to the pan, reduce heat to medium, and caramelize for about 15 minutes, stirring occasionally.
- 4. Drain the cooked potatoes and place them in a bowl. Mash briefly until broken up.
- 5. Heat the remaining vegan butter and coconut milk in the microwave until hot, then add to the mashed potatoes along with minced garlic and salt, mixing until combined.
- 6. Fold in the caramelized onions and let sit for a bit to enhance the flavor.
- 7. Serve with optional black pepper and an extra pat of vegan butter.
