Instructions
- Boil a large pot of water and cook the potatoes until soft.
- In a skillet, heat olive oil and cook the onions, garlic, and thyme on low-medium heat until caramelized.
- Blend the strained potatoes with the onion and garlic mixture and the remaining ingredients until smooth.
- Adjust the consistency with more milk if necessary.
- Serve hot, garnished with a drizzle of oil and fresh thyme.
