Garlic Mashed Potatoes
Ingredients
The potatoes

Yukon gold potatoes (or other thin-skinned potatoes, red potatoes, white potatoes, etc.)
The dairy

sour cream (or crème fraîche, creamy goat cheese, or vegan sour cream)

butter (or vegan butter)
The seasonings

granulated garlic

Instructions
- Cut the potatoes in half or quarters for faster cooking.
- Boil the potatoes in salted water until fork-tender, about 15 minutes.
- Drain the potatoes, saving 1 cup of hot potato water.
- Mash the drained potatoes in the pot, adding butter, sour cream, half the potato water, salt, pepper, and granulated garlic.
- Whip the potatoes until fluffy, adding more potato water to reach desired consistency.
- Taste and adjust salt and pepper. If using, mash in half of the roasted garlic cloves and save some for garnish.
- Before serving, stir well and top with pepper, chives, and a drizzle of melted butter and roasted garlic cloves.
