Garlic Cream Cheese Mashed Potatoes

Ingredients

The potatoes

  • 2 ½ pounds Yukon gold potatoes
  • ¼ cup table salt
  • ½ teaspoon coarse salt

The flavorings

  • 3 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • ½ to 1 cup whole milk
  • 4 ounces cream cheese
  • ½ teaspoon freshly ground black pepper
  • ½ cup shredded Parmesan
  • ¼ cup thinly sliced chives

Instructions

  1. Rinse and optionally peel the Yukon gold potatoes, then cut them into one-inch cubes.
  2. Place the potatoes in a pot, cover with cold water, and add ¼ cup of table salt. Bring to a boil and cook until fork-tender.
  3. Drain the potatoes and set them aside.
  4. In the same pot, melt 2 tablespoons of butter over medium heat and sauté the minced garlic until golden and aromatic.
  5. Return the drained potatoes to the pot, then add ½ cup of milk, cream cheese, coarse salt, and black pepper. Mash until mostly smooth.
  6. Stir in the Parmesan cheese and add more milk as needed to achieve desired consistency. Keep warm over medium-low heat.
  7. Taste and adjust seasoning if necessary, then serve topped with chives.
