Garlic Cream Cheese Mashed Potatoes

Instructions
- Rinse and optionally peel the Yukon gold potatoes, then cut them into one-inch cubes.
- Place the potatoes in a pot, cover with cold water, and add ¼ cup of table salt. Bring to a boil and cook until fork-tender.
- Drain the potatoes and set them aside.
- In the same pot, melt 2 tablespoons of butter over medium heat and sauté the minced garlic until golden and aromatic.
- Return the drained potatoes to the pot, then add ½ cup of milk, cream cheese, coarse salt, and black pepper. Mash until mostly smooth.
- Stir in the Parmesan cheese and add more milk as needed to achieve desired consistency. Keep warm over medium-low heat.
- Taste and adjust seasoning if necessary, then serve topped with chives.
