Ingredients

The potatoes

  • 3 pounds Yukon Gold Potatoes

The mix-ins

  • ½ cups butter
  • 8 ounces cream cheese
  • ¼ cup fresh chives
  • 1 tablespoon minced garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • to taste half and half or milk (optional)

Instructions

  1. Peel and cube the Yukon Gold potatoes.
  2. Place the potato cubes in a large pot of salted water and bring to a boil.
  3. Cook for 15 to 20 minutes until fork-tender, then drain.
  4. Return the potatoes to the pot and heat over low for about 2 minutes to dry them out.
  5. Add the diced butter and mash the potatoes using a potato masher or ricer.
  6. Stir in the cream cheese, chives, garlic, salt, and pepper until combined.
  7. If desired, thin the mixture with half and half or milk, adding a little at a time until the desired consistency is reached.
