Instructions
- Peel and cube the Yukon Gold potatoes.
- Place the potato cubes in a large pot of salted water and bring to a boil.
- Cook for 15 to 20 minutes until fork-tender, then drain.
- Return the potatoes to the pot and heat over low for about 2 minutes to dry them out.
- Add the diced butter and mash the potatoes using a potato masher or ricer.
- Stir in the cream cheese, chives, garlic, salt, and pepper until combined.
- If desired, thin the mixture with half and half or milk, adding a little at a time until the desired consistency is reached.
