Mashed Potatoes

Ingredients

The potatoes

  • 2 ½ pounds Yukon gold potatoes

The seasoning and dairy

  • 1 teaspoon kosher salt
  • 4 tablespoons butter
  • cup half-and-half or cream or milk
  • ½ teaspoon black pepper
  • to taste chives, minced

Instructions

  1. Scrub the potatoes and place them in a deep pot, covering with water about ½ inch above the potatoes.
  2. Bring water to a boil, add ½ teaspoon of kosher salt, and boil for 20 to 30 minutes until easily pierced with a fork.
  3. Drain the potatoes and while hot, wipe the skin off and return them to the warm pot.
  4. Gently smash the potatoes with a hand mixer and add butter, covering to let it melt for 3-4 minutes.
  5. Add half-and-half or other dairy and mix until smooth, rotating the pot while mixing to avoid over-mixing.
  6. Season with remaining kosher salt and black pepper, adjusting dairy for desired consistency, and garnish with chives.
