Mashed Potatoes

Instructions
- Scrub the potatoes and place them in a deep pot, covering with water about ½ inch above the potatoes.
- Bring water to a boil, add ½ teaspoon of kosher salt, and boil for 20 to 30 minutes until easily pierced with a fork.
- Drain the potatoes and while hot, wipe the skin off and return them to the warm pot.
- Gently smash the potatoes with a hand mixer and add butter, covering to let it melt for 3-4 minutes.
- Add half-and-half or other dairy and mix until smooth, rotating the pot while mixing to avoid over-mixing.
- Season with remaining kosher salt and black pepper, adjusting dairy for desired consistency, and garnish with chives.
