Sour Cream Mashed Potatoes

russet or Yukon Gold potatoes, peeled and chopped into roughly ½-inch pieces

Instructions
- 1. Cut the butter into 1-inch pieces and set it along with the sour cream in a warm spot.
- 2. Place the chopped potatoes in a large pot, cover with cold water, and add salt.
- 3. Bring to a boil, then reduce heat to simmer and cook until potatoes are fork-tender, about 10-15 minutes.
- 4. In the last few minutes of cooking, heat the milk in the microwave until steaming.
- 5. Drain the potatoes, add the softened butter, and mash them.
- 6. Stir in ¼ cup of the warmed milk and all of the sour cream, adjusting with more milk, salt, and pepper to taste.
