Best Mashed Potatoes
Ingredients
The potatoes

potatoes (russet, Yukon Gold, or a mix), peeled and cut into large chunks

The mash

unsalted butter (1 stick), plus more for serving

whole milk

sea salt, plus more for cooking water

sour cream (optional)

Instructions
- Peel and cut the potatoes into large chunks.
- Place the potatoes and garlic in a large pot and cover with cold water by 1 inch. Add a tablespoon of salt.
- Bring the water to a boil, then reduce heat and gently boil for 15 to 20 minutes until fork-tender.
- Drain the potatoes and return them to the pot.
- Begin mashing the potatoes and garlic with a potato masher.
- Add the butter, milk, salt, and pepper, and continue mashing until desired consistency is reached.
- If using, fold in the sour cream and season to taste.
- Serve topped with butter and chives.
