Best Mashed Potatoes

Ingredients

The potatoes

  • 3 pounds potatoes (russet, Yukon Gold, or a mix), peeled and cut into large chunks
  • 3 cloves garlic

The mash

  • ½ cup unsalted butter (1 stick), plus more for serving
  • 1 cup whole milk
  • teaspoons sea salt, plus more for cooking water
  • ¼ to ½ cup sour cream (optional)
  • to taste freshly ground black pepper

For garnish

  • to taste chopped fresh chives

Instructions

  1. Peel and cut the potatoes into large chunks.
  2. Place the potatoes and garlic in a large pot and cover with cold water by 1 inch. Add a tablespoon of salt.
  3. Bring the water to a boil, then reduce heat and gently boil for 15 to 20 minutes until fork-tender.
  4. Drain the potatoes and return them to the pot.
  5. Begin mashing the potatoes and garlic with a potato masher.
  6. Add the butter, milk, salt, and pepper, and continue mashing until desired consistency is reached.
  7. If using, fold in the sour cream and season to taste.
  8. Serve topped with butter and chives.
