Best Mashed Potatoes

Instructions
- 1. Heat a large pot with enough water to cover the potatoes and bring it to a boil, adding 2 tsp of salt.
- 2. Cut the potatoes into cubes, peeling the russet potatoes but leaving the yukon skins on.
- 3. Add the potatoes to the boiling water and cook for 15 minutes until fork tender.
- 4. While the potatoes are cooking, melt the butter in a saucepan over medium heat, add minced garlic, and cook for 2 minutes before adding the milk and bringing it to a simmer.
- 5. Drain the potatoes and return them to the pot.
- 6. Pour the milk and butter mixture over the potatoes and mash until smooth.
- 7. Stir in sour cream, salt, and pepper, adjusting seasoning to taste.
- 8. Serve topped with chives and additional butter.
