Creamy Mashed Potatoes

Ingredients

The potatoes

  • 3 pounds russet potatoes
  • Kosher salt

The cream mixture

  • cups heavy cream
  • 5 tablespoons unsalted butter
  • 3-4 peeled garlic cloves
  • 3 tablespoons crème fraîche or sour cream

For garnish

  • freshly ground pepper
  • fresh chives, minced
  • more tablespoons butter

Instructions

  1. Wash and peel the potatoes, then cut them into 2-inch chunks for even cooking.
  2. Place the potatoes in a pot, cover with cold water, and add kosher salt.
  3. Bring to a boil and cook for 18 to 20 minutes until tender, then drain and let dry.
  4. In a small saucepan, warm the heavy cream and butter over medium-low heat, adding smashed garlic to steep.
  5. Rice the potatoes back into the pot in batches.
  6. Pour in the warm cream and butter mixture, add salt and crème fraîche, and mix until combined.
  7. Taste and adjust salt if needed, then serve with melted butter, pepper, and chives.
