Creamy Mashed Potatoes

Instructions
- Wash and peel the potatoes, then cut them into 2-inch chunks for even cooking.
- Place the potatoes in a pot, cover with cold water, and add kosher salt.
- Bring to a boil and cook for 18 to 20 minutes until tender, then drain and let dry.
- In a small saucepan, warm the heavy cream and butter over medium-low heat, adding smashed garlic to steep.
- Rice the potatoes back into the pot in batches.
- Pour in the warm cream and butter mixture, add salt and crème fraîche, and mix until combined.
- Taste and adjust salt if needed, then serve with melted butter, pepper, and chives.
