Sour Cream Mashed Potatoes

Ingredients

The potatoes

  • 4 pounds Russet potatoes, peeled and cut into quarters

The dairy

  • ¼ cup butter
  • 8 ounces cream cheese, room temperature, cut into small cubes
  • ½ cup sour cream, room temperature
  • 1 cup milk, room temperature or warm

The seasonings

  • teaspoons kosher salt, or more to taste
  • ½ teaspoon black pepper, or more to taste
  • teaspoons garlic, minced

The garnish

  • 2 tablespoons chopped parsley and/or chives, optional
  • as needed slices butter, optional

Instructions

  1. 1. Boil a large pot of heavily salted water.
  2. 2. Add the quartered potatoes and cook until very tender, about 20 minutes.
  3. 3. Drain the potatoes and return them to the pot.
  4. 4. Melt the butter with garlic in a microwave until melted.
  5. 5. Add the melted butter mixture, cream cheese, sour cream, milk, salt, and pepper to the potatoes.
  6. 6. Mash the potatoes until mostly smooth.
  7. 7. Taste and adjust seasoning if necessary.
  8. 8. Transfer to a serving dish and garnish with parsley or chives and additional butter if desired.
