Ingredients

The potatoes

  • 8 medium Russett Potatoes, peeled and cut into one inch chunks

The mixture

  • cup Light Sour Cream
  • 4 tbsp Butter, softened
  • 2 tsp Onion Salt
  • to taste Salt
  • to taste Pepper
  • ¼ cup 2% milk

Instructions

  1. Peel and cut the potatoes into one inch chunks.
  2. Place the potatoes in a large pot and cover with cold water, adding salt as you would for pasta.
  3. Bring the pot to a boil and cook for 8-10 minutes until the potatoes are fork tender.
  4. Drain the potatoes and return them to the hot pot.
  5. Add the butter, sour cream, and onion salt, then mash with a potato masher.
  6. Taste and adjust seasoning with salt, pepper, and milk to achieve desired consistency.
